These Blueberry Crumble Bars are easy to make, nutritious, and bursting with juicy blueberries. A delicious breakfast or dessert recipe that the whole family will enjoy. It is perfect as a snack option too.

These breakfast bars are so delicious they are quite addicting too. It will be hard to stop at one serving. They are easy to make and the aroma in your kitchen, while these are baking, will make your tummy grumble. They are made using gluten-free flour, fresh blueberries, and other clean ingredients to make your breakfast a guilt-free treat. Perfect for grab-and-go the next day.

Recipe Summary

Ingredients you will need
- Flour: I used whole wheat flour, but you can use any flour.
- Oats: Do use rolled oats instead of quick oats.
- Desiccated coconut
- Coconut sugar: or brown sugar
- Coconut oil: or melted butter
- Fresh blueberries
- Vanilla extract
- Cornstarch or GF flour
- Lemon, juice and zest of

How to make blueberry bars
Preheat the oven to 350°F and line a 9×9 baking pan with parchment paper.
Step 1: In a large bowl mix the flour, rolled oats, desiccated coconut, and 1 cup coconut sugar. Pour the coconut oil, and stir to combine.
Step 2: Divide the mixture adding about 2/3 of it to your prepared pan. Spread and gently press the mixture in an even layer all over the base of the pan. Reserve 1/3 of the mixture for the topping.
Step 3: In a medium bowl combine all the ingredients for the filling, stirring well to incorporate the cornstarch. Spread the blueberry mixture over the base in the pan.
Step 4: Sprinkle with the reserved oat mixture. Bake, in the middle rack of the oven, for 30-35 minutes.
Frequently asked questions
Can I use frozen blueberries for blueberry bars?
Yes. You can use either fresh blueberries or frozen blueberries.
Can I use quick oats?
I do recommend using rolled oats instead of quick oats to make these blueberry bars.
Are blueberries high or low in calories?
Fresh blueberries are low in calories. One cup of blueberries contains only 84 calories, with 21.5 grams of carbohydrates. They are also high in fiber.
How to store blueberry bars?
Place the blueberry bars in a sealed container in the fridge for for up to 7 days.
Storage recommendations
You can store these blueberry breakfast bars in an airtight container when cooled off. They are good for a few hours on your kitchen counter at room temperature and last for 5-7 days if stored in the refrigerator.

Blueberry Breakfast Bars

Easy and quick blueberry breakfast bars made with rolled oats, fresh blueberries, and other simple pantry staple ingredients.
Ingredients
- 3/4 cup whole wheat flour
- 1 1/2 cup rolled oats
- 1/4 cup desiccated coconut
- 1 cup coconut sugar, or brown sugar, you may also use 1/2 cup sugar and 1/3 cup honey
- 2/3 cup coconut oil
Blueberry Filling:
- 2 cups fresh blueberries
- 1/3 cup coconut sugar
- 2 teaspoon vanilla extract
- 1½ tablespoon cornstarch , or gluten-free flour
- ½ lemon, juice, and zest
Instructions

Bake, in the middle rack of the oven, for 30-35 minutes.

Notes
- In place of coconut sugar, you can use 1/2 cup honey and 1/2 cup brown or coconut sugar. If using honey, add 1 cup of flour instead of 3/4 cup.
- You must allow it to cool completely before cutting and serving.
- Make sure you press down the base firmly and that it isn’t too thin. Otherwise, the bars will fall apart when you handle it.
- Instead of 1 cup of coconut sugar for the oat base, I recommend you use 1/2 cup plus 1/3 cup of honey.
